Tello's firmware is locked, so there is no way to change the video protocol of the drone. One could add some piece of hardware as a man-in-the-middle but thats too heavy, power hungry and would actually increase latency.
At least the ESP32 device they use isn't much of an improvement over Tello. It can do 12 FPS at 1024x768 with >100 ms latency while Tello does 720p at 30fps with 120-150ms (on a recent phone running TelloFpv).
Plus any man in the middle would have a hard time to match Tello's wifi range.
